Data relating to the identity of the pupil is kept for the duration of his/her schooling at the establishment. The biometric templates of the hand contour associated with a personal access code are kept for the duration of the school year. If a person leaves the establishment or is disenrolled from the school catering service during the year, the biometric data is erased in the week following his/her departure or disenrollment.

At the end of the student's schooling, all computerized data concerning him or her must be destroyed. That is to say, they must be deleted from computerized management applications (schooling, grades, etc.) or spreadsheet-type files that helped administer the student during his or her schooling.
